This dish started with its stunning presentation and continued with its list of stellar ingredients of fresh southwest seasoned halibut pan sautéed and severed over honey-nut quinoa with wilted spinach, tropical fruit salsa and chopped scallions.

Executive Chef Simon DeJohn of The Carlton Restaurant has a magnificent way of combining flavors without letting any ingredient overpower the other.
The dish was layered with wilted spinach topped with honey nut quinoa. Quinoa is native to South America. It was once called “the gold of the Incas” because it increases stamina and endurance. The benefits of quinoa are as abundant as its culinary uses. Quinoa is a protein powerhouse. It is a good choice for those with gluten intolerance because it is gluten free and easy to digest. Raw honey has been used as a sweetener for centuries; it is an all-natural sweetener.

On top of the quinoa was the subtle yet flavorful halibut. Halibut are a good source of protein, they are rich in significant amounts of a variety of important nutrients including the minerals selenium, magnesium, phosphorus and potassium; the B vitamins B12, niacin, and B6; and perhaps most important, the beneficial omega-3 essential fatty acids.

Topping off this dish is a papaya mango salsa with a hint of cumin and chili powder. Papaya and mango are sweet and succulent, plus they offer numerous health benefits. They are full of antioxidants and lots of vitamins and minerals.

If there was ever thought that healthy dishes taste bland, this dish will change your mind.
